Of course.

I defined it in my shell profile (.zshrc actually),

export FULLEMAIL="Nicolas Pouillard <nicolas.pouillard@gmail.com>"

I know that is not standard, and I can be easily convinced to support
something more portable.

In my .zshrc I have $EMAIL, $MAILADDR as well.
