Well you do not have rake installed:

> rake RUBYARCHDIR=/usr/lib/ruby/gems/1.8/gems/xapian-full-1.1.3.4/lib
> RUBYLIBDIR=/usr/lib/ruby/gems/1.8/gems/xapian-full-1.1.3.4/lib
> sh: rake: command not found

rake is "RAKE - Ruby Make" http://rake.rubyforge.org/ 
I bet there is a CentOS package for rake
